A real classic as far as extraction methods go. The stove top coffee maker is a simple, timeless, method to extract coffee. These machines can be tucked away, out of site, when not in use, and a good one will last forever. The most common stove top coffee machine is the Moka pot. The Italian machine has become synonymous with stove top extraction.

Pre-boil a kettle of water. You don’t have to do this if you don’t want to, but this can speed up your brewing time!

Pour the boiled water into the base of the stove-top, up to the pressure valve and no higher. I repeat, DO NOT FILL ABOVE THIS SAFETY VALVE!

Fill up the coffee basket with coffee. You don’t need to tamp the ground into the basket. There is not enough pressure created for the water to extract through a compressed bed of coffee. You just fill until it is level with the top of the basket and then scrape off the excess with your finger.

Screw the pot onto the base. Be careful to hold it with something to insulate the heat.

Place the Moka pot on the stove and heat it at a medium heat. You need to get it to a boil, so the evaporating water will pass through the bed of coffee and into the top of the pot.

Turn off the stove a few seconds after the first bubble appear at the top of the spout. Listen out for a percolation sound. You will come to know this sound in time, but it is quite distinctive.

Wait until the coffee stops bubbling out the spout. Pour and enjoy!
